As the Concord has not recorded a lat/Long for the voyage from San Francisco to Sitka and back would it be of use for me to record the side locations like on this page.

How will that effect the official location entry like 'Making passage from ... to ... etc.   '

Yes Stuart, recording additional location data is very useful when no lat/longs have been given.
The 'official' location entry should be entered as usual.
